Pesto Gnocchi
Preparation time: 10 minutes
Cooking time: 10 minutes
Serve with: eat on it's own or with fresh or garlic bread

Ingredients
- Two tablespoons of your preferred pesto
- 125g Mozzarella, preferably a ball rather than grated
- 250g Gnocchi
- Olive oil as necessary (or none at all if your pesto has enough)
- Salt and pepper to taste
Method
- Add the gnocchi, pesto and some oil (if necessary) to a frying pan or air fryer
- Add salt and pepper to your taste
- Mix well to ensure all ingredients are lightly coated in pesto
- Either;
- Fry for as long as necessary until everything is slightly crispy
- Air fry at 180-200°C for 10 minutes
- Add the mozzarella and fry for another minute or two
Notes
You could serve on a bed of thin tomato sauce and add a basil garnish or sprinkle some of the dried version on top.
