Pesto Gnocchi

Cooking time: 10 minutes

Serve with: eat on it's own or with fresh or garlic bread

Ingredients

  • Two tablespoons of your preferred pesto
  • 125g Mozzarella, preferably a ball rather than grated
  • 250g Gnocchi
  • Olive oil as necessary (or none at all if your pesto has enough)
  • Salt and pepper to taste

Method

  • Add the gnocchi, pesto and some oil (if necessary) to a frying pan or air fryer
  • Add salt and pepper to your taste
  • Mix well to ensure all ingredients are lightly coated in pesto
  • Either;
  • Fry for as long as necessary until everything is slightly crispy
  • Air fry at 180-200°C for 10 minutes
  • Add the mozzarella and fry for another minute or two

Notes

You could serve on a bed of thin tomato sauce and add a basil garnish or sprinkle some of the dried version on top.
