The UK's Food Standards Agency (FSA) recommends;1

  • Beef:
    • rare:
    • medium:
    • well done:
  • Chicken: 180 °C ((160 °C fan oven, 350 °F)
  • Duck: 200 °C (180 °C fan oven, 400°F)
  • Goose: 200 °C (180 °C fan oven, 400°F)
  • Lamb:
    • rare:
    • medium:
    • well done:
  • Pork:
  • Turkey: 180 °C ((160 °C fan oven, 350 °F)
