Flapjacks

Preparation time: 5 minutes

Cooking time: 40 minutes

Makes around 12 flapjacks.

Ingredients

  • 350g Oats
  • 160g Butter - I use salted for extra flavour
  • 160g Light muscovado (or any other light brown) sugar
  • 160g Golden syrup - preferably not the thinner, pourable kind

Method

  • Preheat the oven to 130°C
  • Melt the 160g butter in a pan on a low heat
  • Once the butter has all melted add the 160g sugar and 160g golden syrup and stir well
  • Take the pan off the heat and stir in the 350g oats
  • Once all the oats are coated in the mixture put it all in a baking paper lined baking tin or tray or other suitable container
  • Bake on the middle shelf of your oven for 40 minutes
  • Remove from the oven and allow to cool for 15 minutes
  • Turn out onto a chopping board and cut into pieces as you see fit

Notes

There's lots of modifications you can make to the base recipe;

  • Replace 50g of the oats with sesame, pumpkin or sunflower seeds, or a combination of all three
  • Add some nuts or glacier cherries
  • Replace 20g (or more) of the sugar with maple syrup for a more complex flavour
