Vegetables high in nitrate (which is converted to nitric oxide) include;

- cress
- chervil (herb related to parsley)

Note that nitrates can cause cancer; however the antioxidants also found in the vegetables listed mitigates this risk. This is not the case with processed meats such as bacon and chorizo.
