Gnocchi

Preparation time: 10 minutes

Cooking time: 20 minutes

Serve with: eat on it's own or with fresh bread or garlic bread

Ingredients

  • One medium red onion (approx. 100g peeled)
  • 2-3 Decent size cloves of garlic
  • 1 Bell pepper
  • Two tablespoons of your preferred tomato sauce, passata or similar
  • 100-150g Mushrooms of your choice - we use chestnut
  • 125g Mozzarella, preferably a ball not grated
  • 250g Gnocchi
  • Olive oil as necessary
  • Salt and pepper to taste

Method

  • Chop the onion (don't dice it), mushrooms and peppers into rough gnocchi-sized pieces
  • Peel the garlic cloves
  • Add the chopped vegetables, gnocchi, tomato sauce and some oil to a frying pan or air fryer
  • Crush and add the garlic
  • Add salt and pepper to your taste
  • Mix well to ensure all ingredients are lightly coated in oil
  • Either;
  • Fry for as long as necessary until everything is slightly crispy
  • Air fry at 180-200°C for 10 minutes, stir and then air fry for another 5 minutes
  • Add the mozzarella and fry for another minute or two

Notes

You could serve on a bed of more tomato sauce, or use a thinned out pesto sauce instead.
