Gnocchi
Preparation time: 10 minutes
Cooking time: 20 minutes
Serve with: eat on it's own or with fresh bread or garlic bread

Ingredients
- One medium red onion (approx. 100g peeled)
- 2-3 Decent size cloves of garlic
- 1 Bell pepper
- Two tablespoons of your preferred tomato sauce, passata or similar
- 100-150g Mushrooms of your choice - we use chestnut
- 125g Mozzarella, preferably a ball not grated
- 250g Gnocchi
- Olive oil as necessary
- Salt and pepper to taste
Method
- Chop the onion (don't dice it), mushrooms and peppers into rough gnocchi-sized pieces
- Peel the garlic cloves
- Add the chopped vegetables, gnocchi, tomato sauce and some oil to a frying pan or air fryer
- Crush and add the garlic
- Add salt and pepper to your taste
- Mix well to ensure all ingredients are lightly coated in oil
- Either;
- Fry for as long as necessary until everything is slightly crispy
- Air fry at 180-200°C for 10 minutes, stir and then air fry for another 5 minutes
- Add the mozzarella and fry for another minute or two
Notes
You could serve on a bed of more tomato sauce, or use a thinned out pesto sauce instead.
