Pancake Mix

Preparation time: 15-25 minutes

Cooking time: 30 to 120 minutes

Enough for for 6-8 pancakes.

Don't be fooled and think it's too runny - as the mixture is so thin, so are the pancakes.

Ingredients

  • 110g Plain flour
  • Two eggs
  • 200ml Milk mixed with 75ml water
  • 30g Butter
  • Salt to taste

Method

  • Sift the 110g plain flour into a mixing bowl
  • Add the salt
  • Make a well in the middle of the plain flour and break the two eggs into it
  • Whisk gently (a fork is fine if need be)
  • Add the 200ml milk gradually, right from the start
  • Keep whisking till smooth
  • Melt the 30g butter and add to the batter and whisk some more

  • Fry on a medium heat
